Colorful fruit tartlets with creamy vanilla pudding and a sweet apple jelly glaze, perfect for entertaining or a light, delightful dessert for any occasion.

Ingredients

  • 1 (3 1/2 oz.) pkg. instant vanilla pudding and pie filling
  • 2 c. cold milk
  • 1 pkg. (6 shells) single serving crust shells (4 oz.)
  • 1 1/2 to 2 c. assorted fresh fruits (blueberries, sliced strawberries, seedless grapes, chopped kiwi, sliced peaches)
  • 1/4 c. apple jelly

Instructions

  1. Combine the instant vanilla pudding and cold milk in a mixing bowl according to the package directions.
  2. Arrange approximately two cups of fresh fruits on a plate for easy access.
  3. Fill each tart shell halfway with the prepared pudding using a spoon.
  4. Arrange sliced or cut fruits on top of the pudding in an attractive pattern, using a variety of colors.
  5. Measure out 1/4 cup of apple jelly and place it into a small saucepan.
  6. Melt the apple jelly over low heat for about 15 minutes, stirring occasionally.
  7. Using a pastry brush, spread the melted apple jelly over the fruit-topped tarts to create a shiny glaze.
  8. Chill the assembled tarts for at least one hour before serving.
