- Combine the instant vanilla pudding and cold milk in a mixing bowl according to the package directions.
- Arrange approximately two cups of fresh fruits on a plate for easy access.
- Fill each tart shell halfway with the prepared pudding using a spoon.
- Arrange sliced or cut fruits on top of the pudding in an attractive pattern, using a variety of colors.
- Measure out 1/4 cup of apple jelly and place it into a small saucepan.
- Melt the apple jelly over low heat for about 15 minutes, stirring occasionally.
- Using a pastry brush, spread the melted apple jelly over the fruit-topped tarts to create a shiny glaze.
- Chill the assembled tarts for at least one hour before serving.
