Ingredients

  • 1 pkg. large shell pasta
  • 1 carton low-fat cottage cheese
  • 1/4 c. Parmesan cheese
  • 1/2 c. Mozzarella cheese
  • 1 jar spaghetti sauce
  • 1 clove garlic
  • 2 Tbsp. low-fat margarine
  • 1 jar mushrooms
  • 1 pkg. frozen chopped spinach

Instructions

  1. Cook large shell pasta according to package instructions and set aside.
  2. In a saucepan, sauté garlic and mushrooms in margarine until tender.
  3. Mix the sautéed garlic and mushrooms with cottage cheese, chopped spinach, and shredded mozzarella cheese.
  4. Spoon the cottage cheese mixture into the cooked shells and place them in the bottom of a 9 x 13-inch pan sprayed with Pam.
  5. Pour spaghetti sauce over the shells and sprinkle with Parmesan cheese.
  6. Bake at 350°F for 30 minutes or until heated through and bubbly.
