Ingredients

  • 1/2 cup butter
  • 6 medium potatoes
  • 12 slices bacon
  • 1 (4 oz.) can sliced mushrooms
  • 1 cup shredded Swiss cheese
  • 6 eggs

Instructions

  1. Melt butter in a large frying pan.
  2. Add potatoes and fry until brown.
  3. Transfer the fried potatoes to a 9-inch square baking dish.
  4. Sprinkle the cooked and crumbled bacon over the potatoes.
  5. In a bowl, stir together egg yolks, sliced mushrooms, and shredded Swiss cheese.
  6. Beat egg whites until stiff, but not dry.
  7. Fold the cheese mixture into the beaten egg whites.
  8. Pour the egg and cheese mixture over the bacon in the baking dish.
  9. Bake in a preheated oven at 350°F for 25 to 30 minutes or until set.
