Ingredients

  • 1 egg
  • 1 teaspoon baking powder
  • 1/4 cup salad oil
  • 1 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1/2 cup raisins
  • 1 cup bran flakes
  • 1/4 teaspoon salt
  • Sweet 'N Low (as needed)

Instructions

  1. Stir together flour, salt, baking powder, and cinnamon, then add bran flakes.
  2. Beat the egg and add water, Sweet 'N Low, and salad oil. Stir into dry ingredients, mixing as little as possible.
  3. Add raisins to the batter.
  4. Line muffin pans with paper liners and divide the batter evenly into 12 muffin cups.
  5. Bake at 400°F (200°C) for 25 minutes.
