Ingredients

  • 1.5 gallons green tomatoes
  • 1/4 cup salt
  • 3 quarts onions
  • 1 quart red bell pepper
  • 7 cups sugar
  • 1 quart red apple cider vinegar

Instructions

  1. Dice the green tomatoes (not too fine) and sprinkle with salt.
  2. Set aside to let the salt draw out moisture.
  3. Squeeze the tomatoes to remove the salty juice and discard the juice.
  4. Mix the drained tomatoes with diced onions and red bell peppers.
  5. Add two peppers initially, taste, and then add more until desired heat is achieved.
  6. Pour red apple cider vinegar over sugar and bring almost to a boil.
  7. In an electric roaster, combine all ingredients and set temperature to 300°F, cooking for about 10 minutes.
  8. Pour the hot vinegar and sugar mixture over the tomato mixture.
  9. Reduce heat to 200°F and simmer for 4 1/2 to 5 hours, ensuring it does not boil or overcook.
  10. Taste periodically to determine when it is done.
  11. Bottle the relish and seal tightly.
