- Dice the green tomatoes (not too fine) and sprinkle with salt.
- Set aside to let the salt draw out moisture.
- Squeeze the tomatoes to remove the salty juice and discard the juice.
- Mix the drained tomatoes with diced onions and red bell peppers.
- Add two peppers initially, taste, and then add more until desired heat is achieved.
- Pour red apple cider vinegar over sugar and bring almost to a boil.
- In an electric roaster, combine all ingredients and set temperature to 300°F, cooking for about 10 minutes.
- Pour the hot vinegar and sugar mixture over the tomato mixture.
- Reduce heat to 200°F and simmer for 4 1/2 to 5 hours, ensuring it does not boil or overcook.
- Taste periodically to determine when it is done.
- Bottle the relish and seal tightly.
