Ingredients

  • 1/2 cup butter
  • 1/2 cup peanut oil
  • 1 teaspoon salt
  • 2 pheasants or 4 breasts
  • 1 1/2 cups beef broth
  • 2/3 cup chopped onion
  • 1/4 pound sliced mushrooms
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons catsup
  • 2 tablespoons flour

Instructions

  1. Flour the pheasants or pheasant breasts.
  2. Brown the floured pheasant in butter and peanut oil.
  3. Place the browned pheasant in a casserole that can be used on a burner.
  4. Add beef broth to the casserole.
  5. Cook at a slow heat for 2 1/2 hours.
  6. Saute chopped onions and sliced mushrooms in butter in a separate pan.
  7. Add Worcestershire sauce, catsup, 2 tablespoons of flour, and the broth from cooking the pheasant.
  8. Add sour cream last, stirring gently.
  9. Do not boil after adding sour cream.
  10. Garnish with chopped parsley and serve over rice, pasta, or potatoes.
