Ingredients

  • 6 catfish
  • 2 tsp salt
  • 1/4 tsp pepper
  • 2 eggs
  • 2 Tbsp milk
  • 2 c cornmeal

Instructions

  1. Sprinkle catfish with salt and pepper on both sides.
  2. Beat eggs with milk in a shallow dish.
  3. Dip catfish in the egg mixture; roll in cornmeal.
  4. Fry catfish in 1/8-inch hot shortening in a heavy skillet.
  5. Fry over medium heat until brown on both sides.
  6. Drain on absorbent paper and serve immediately.
