Baked Seafood Platter
A hearty baked seafood platter featuring tender catfish, shrimp, and crabmeat, combined with flavorful vegetables and creamy soups for a comforting seafood feast.
Ingredients
- 1 lb. catfish fillets
- 1 lb. shrimp, peeled and deveined ⓘ
- 1/2 lb. crabmeat ⓘ
- 1 cup onions, chopped ⓘ
- 1/4 cup bell pepper, chopped
- 1/2 cup celery ⓘ
- 1 can cream of mushroom soup ⓘ
- 1 can Cheddar cheese soup ⓘ
- 1 can Ro-Tel tomatoes, minced ⓘ
- 1/2 cup butter-flavored shortening
- garlic powder to taste ⓘ
- salt and pepper to taste
Instructions
- Saute catfish in half of the butter-flavored shortening just long enough to keep it from falling apart.
- Place the cooked fish in a 12 x 18-inch baking dish.
- In a mixing bowl, combine chopped onions, bell pepper, celery, cream of mushroom soup, Cheddar cheese soup, Ro-Tel tomatoes, remaining shortening, garlic powder, salt, and pepper.
- Add the peeled and deveined shrimp and crabmeat to the mixture and stir gently.
- Pour the mixture over the fish in the baking dish.
- Bake in a preheated oven at 375°F (190°C) for about 30 minutes, until bubbly and heated through.
- Serve hot, garnished with additional herbs if desired.
