Ingredients

  • 1 lb. catfish fillets
  • 1 lb. shrimp, peeled and deveined
  • 1/2 lb. crabmeat
  • 1 cup onions, chopped
  • 1/4 cup bell pepper, chopped
  • 1/2 cup celery
  • 1 can cream of mushroom soup
  • 1 can Cheddar cheese soup
  • 1 can Ro-Tel tomatoes, minced
  • 1/2 cup butter-flavored shortening
  • garlic powder to taste
  • salt and pepper to taste

Instructions

  1. Saute catfish in half of the butter-flavored shortening just long enough to keep it from falling apart.
  2. Place the cooked fish in a 12 x 18-inch baking dish.
  3. In a mixing bowl, combine chopped onions, bell pepper, celery, cream of mushroom soup, Cheddar cheese soup, Ro-Tel tomatoes, remaining shortening, garlic powder, salt, and pepper.
  4. Add the peeled and deveined shrimp and crabmeat to the mixture and stir gently.
  5. Pour the mixture over the fish in the baking dish.
  6. Bake in a preheated oven at 375°F (190°C) for about 30 minutes, until bubbly and heated through.
  7. Serve hot, garnished with additional herbs if desired.
