Ingredients

  • 4 cups self-rising cornmeal mix
  • 16 oz. can cream-style corn
  • 16 oz. carton dairy sour cream
  • 2 cups shredded sharp Cheddar cheese
  • 11 oz. can Ro-Tel diced tomatoes
  • 1/4 cup vegetable oil
  • 4 eggs
  • 1/4 cup finely chopped red and green bell pepper and onion

Instructions

  2. Mix all ingredients in a large bowl.
  3. Pour the mixture into a hot, greased 9 x 14-inch pan.
  4. Bake for 30 to 35 minutes or until golden brown, more golden than brown.
