A hearty Tex-Mex roast slow-cooked with pinto beans, green chilies, tomatoes, and spices for a flavorful and comforting meal perfect for family dinners or gatherings.

Ingredients

  • 1 roast
  • 2 c. dry pinto beans
  • 1 can chopped green chilies
  • 1 can Ro-Tel tomatoes
  • 1 c. mushrooms
  • 1 onion
  • 1 can tomato sauce
  • 1/4 c. sugar
  • salt

Instructions

  1. Trim fat from the roast.
  2. Salt and pepper both sides of the roast.
  3. Place the roast in a roaster.
  4. Pour the chopped green chilies, Ro-Tel tomatoes, mushrooms, chopped onion, tomato sauce, and sugar around the roast.
  5. Cover with water.
  6. Place the lid on the roaster.
  7. Bake in the oven for 12 hours at 250°F.
