- Brown the pork sausage and ground beef, then drain the excess fat.
- Melt the Velveeta cheese in a microwave-proof dish.
- Combine all ingredients including meats, cheese, picante sauce, cream of chicken and celery soups, and Ro-Tel tomatoes (if using) in a crock-pot.
- Mix everything well in the crock-pot.
- Keep the crock-pot on low, stirring occasionally to prevent sticking, until warmed through.
- Serve with lightly salted tortilla chips.
