Ingredients

  • 2 lb. frozen hash brown potatoes
  • 1 tsp. salt
  • dash of pepper
  • 1 can cream of chicken soup
  • 10 oz. grated sharp Cheddar cheese
  • 1/2 cup melted butter
  • 1 pint sour cream
  • 1/2 cup finely chopped onion
  • 2 cups crushed corn flakes

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine frozen hash brown potatoes, salt, pepper, cream of chicken (or celery or mushroom) soup, grated Cheddar cheese, melted butter, sour cream, and chopped onion. Mix well.
  3. Transfer the potato mixture into a greased baking dish.
  4. Sprinkle crushed corn flakes evenly over the top of the casserole.
  5. Bake in the preheated oven for 45 minutes or until bubbly and golden on top.
