Ingredients

  • 1 lb pinto beans
  • 1 can Rotel tomatoes and green chilies
  • 1 lb lean ground beef
  • 1 large onion
  • 1 can tomatoes

Instructions

  1. Boil pinto beans according to package directions until tender.
  2. Sauté chopped onion in a small amount of margarine or oil until transparent.
  3. Add lean ground beef to the onions and cook until browned.
  4. Combine the cooked beef and onions with the drained beans.
  5. Add Rotel tomatoes and canned tomatoes to the mixture.
  6. Simmer the mixture to allow flavors to blend, about 20-30 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot over cooked rice.
