Ingredients

  • 2 eggs
  • 2 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/3 c. milk
  • 4 oz. can mild green chilies, chopped
  • 1/2 lb. sharp Cheddar cheese, grated
  • 1/2 lb. Monterey Jack cheese, grated

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, beat the eggs.
  3. Add flour, salt, and milk to the beaten eggs and mix well.
  4. Stir in chopped green chilies, grated Cheddar cheese, and grated Monterey Jack cheese.
  5. Pour the mixture into a well-greased 8 x 12-inch glass dish.
  6. Bake in the preheated oven for 35 minutes until set and golden.
  7. Cut into squares and serve hot.
  8. Enjoy, and note that it freezes well for later.
