- Mix all the ingredients, except the oil, for 3 minutes using the lowest speed of the mixer, or by hand, until well mixed.
- Then slowly add the oil as you mix for another 3 minutes, again using the lowest speed or stirring by hand.
- Fill well-greased muffin tins 3/4 full of batter.
- Bake in a preheated 350°F oven for 15 to 20 minutes, until golden brown.
