Ingredients

  • 1 1/3 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 1/3 cups corn meal
  • 7 teaspoons baking powder
  • 3 cups flour
  • 1 1/2 cups cold milk
  • 4 eggs
  • 1/2 cup salad oil

Instructions

  1. Mix all the ingredients, except the oil, for 3 minutes using the lowest speed of the mixer, or by hand, until well mixed.
  2. Then slowly add the oil as you mix for another 3 minutes, again using the lowest speed or stirring by hand.
  3. Fill well-greased muffin tins 3/4 full of batter.
  4. Bake in a preheated 350°F oven for 15 to 20 minutes, until golden brown.
