Ingredients

  • 1 lb. ground chuck or sirloin
  • 2 qt. water
  • 3 bouillon cubes
  • 3 onions, sliced
  • 3 carrots, sliced
  • 1 (1 lb.) can chopped tomatoes
  • 3 stalks celery, chopped
  • 1 Tbsp. salt
  • 1/2 c. quick cooking rice
  • 1/2 c. quick cooking barley

Instructions

  1. Place the ground meat in a 4-quart casserole dish.
  2. Microwave on High (100%) for 5 minutes, stirring twice during cooking.
  3. Add water, bouillon cubes, onions, carrots, chopped tomatoes, celery, salt, rice, and barley. Cover the dish.
  4. Microwave on High (100%) or simmer on the stove for 45 minutes, stirring every 15 minutes.
  5. Let the soup stand, covered, for 30 minutes before serving.
