Ingredients

  • 3/4 cup all-purpose flour
  • 3 Tbsp. unsalted margarine
  • 1/4 tsp. vanilla flavoring
  • 2 peaches, sliced and unpeeled
  • 1/2 tsp. vanilla flavoring
  • dash of salt
  • 2 to 3 Tbsp. cold water
  • vegetable cooking spray
  • 1 Tbsp. apple juice

Instructions

  1. Combine flour and salt in a bowl. Cut in margarine with a pastry blender until mixture resembles coarse meal.
  2. Sprinkle with cold water and 1/4 teaspoon vanilla flavoring. Stir with a fork until all dry ingredients are moistened.
  3. Shape dough into a ball and press into a lightly greased pie plate. Set aside.
  4. In a bowl, combine peaches, apple juice, 1/2 teaspoon vanilla flavoring, and 1 tablespoon brown sugar, tossing well.
  5. Arrange peaches in concentric circles on the dough, starting 1 inch from the edge.
  6. Sprinkle with 2 teaspoons brown sugar.
  7. Bake at 400°F for 25 minutes or until golden and crisp.
