Three Bean Skillet

Ingredients

  • 2 Tbsp. oil
  • 1 onion, diced
  • 1 garlic clove, diced
  • 1 (16 oz.) can tomatoes, cut up
  • 1 (10 oz.) pkg. frozen lima beans
  • 1 (16 oz.) can white beans
  • 1 (16 oz.) can kidney beans
  • 4 tsp. brown sugar
  • 1 1/4 tsp. salt
  • Cheddar cheese for topping (optional)

Instructions

  1. In a pan or electric skillet, cook oil, onion and garlic, until onion is translucent.
  2. Discard garlic.
  3. Add remaining ingredients and mix.
  4. Cover and simmer for 15 minutes.
  5. Add shredded Cheddar cheese on top.
