Three Cheese Bread
Ingredients
- 5 2/3 cups self-raising flour
- 1 tsp baking powder ⓘ
- 1/2 tsp salt ⓘ
- 4 tbsp butter ⓘ
- 1 None large egg ⓘ
- 1 1/2 cups milk, plus extra, to glaze ⓘ
- 1 cup mozzarella, diced ⓘ
- 1/2 cup vintage Cheddar, diced ⓘ
- 1/2 cup Parmesan, grated ⓘ
- 1 tbsp fresh thyme leaves, plus 6 whole sprigs ⓘ
- 1 None red onion, thickly sliced ⓘ
Instructions
- Preheat oven to 400°F. Spray an 8 inch round springform pan with cooking oil.
- Place flour, baking powder, salt and butter in a food processor. Process until mixture resembles fine breadcrumbs. Transfer to a large bowl. Whisk together egg and milk in a small bowl. Stir egg mixture, mozzarella, Cheddar, Parmesan and thyme leaves into flour mixture until it forms a sticky dough. Spread into prepared pan. Brush the top with milk to glaze. Spray onion slices with cooking oil and press lightly into dough along with thyme sprigs.
- Bake for 50-55 mins, until golden brown and bread starts to come away from sides of the pan. Cover with foil if top is browning too quickly. Transfer to a wire rack to cool.
