Three Cheese Vegetable Lasagna
Ingredients
- 1 c. chopped onion ⓘ
- 1 garlic clove, minced ⓘ
- 1 c. sliced mushrooms ⓘ
- 1 c. chopped carrots
- 1/2 c. diced green pepper ⓘ
- 3 c. canned tomatoes, crushed ⓘ
- 8 cooked lasagna noodles ⓘ
- 1 Tbsp. dried parsley ⓘ
- 1/2 tsp. each: basil, oregano and chili powder ⓘ
- 1/4 tsp. dried rosemary ⓘ
- pepper to taste ⓘ
- 3 oz. grated Romano cheese ⓘ
- 5 oz. Mozzarella cheese ⓘ
- 1 1/3 c. cottage cheese ⓘ
Instructions
- Saute the first 5 ingredients in nonstick skillet until vegetables are softened.
- Add tomatoes and spices.
- Simmer 15 minutes.
- Mix cheeses.
- Spoon half of sauce in bottom of a sprayed 12 x 8-inch casserole dish.
- Place 1/2 noodles on top.
- Spread with half cheeses; place noodles on top, and top with remaining sauce and cheeses.
- Bake at 375° for 30 minutes.
