Ingredients

  • 1/4 cup packed brown sugar
  • 1/4 cup shortening
  • 1/4 cup margarine or butter, softened
  • 1 egg yolk
  • 1/2 teaspoon vanilla
  • 1 cup white or whole wheat flour
  • 1/4 teaspoon salt
  • 1 egg white, slightly beaten
  • 3/4 cup finely chopped nuts
  • mint jelly
  • strawberry jelly

Instructions

  1. Mix the brown sugar, shortening, margarine or butter, egg yolk, and vanilla until well combined.
  2. Add the flour and salt, mixing until the dough holds together.
  3. Shape the dough into 1-inch balls.
  4. Dip each ball into the beaten egg white, then roll in the chopped nuts.
  5. Place the balls 1 inch apart on an ungreased cookie sheet.
  6. Press your thumb deeply into the center of each ball to make a well.
  7. Bake at 350°F (175°C) for 8 to 9 minutes until light brown.
  8. Remove from oven and let cool slightly.
  9. Fill each thumbprint with mint or strawberry jelly before serving.
