Ingredients

  • 1 1/2 cups pecans, chopped
  • 3/4 cup plus 3 tablespoons butter or margarine
  • 1/2 teaspoon salt
  • 3 eggs
  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 cups sugar
  • 3/4 cup milk
  • 1 1/2 teaspoons vanilla

Instructions

  1. Toast pecans in 2 tablespoons butter in a 350°F oven for 20 minutes.
  2. Stir the pecans and butter after toasting.
  3. Cream the butter; add sugar and beat well.
  4. Blend in the eggs one at a time.
  5. Beat the mixture well after adding eggs.
  6. Add dry ingredients alternately with milk, beginning and ending with dry ingredients.
  7. Blend in vanilla and 2/3 cup of toasted pecans.
  8. Turn the batter into two well-greased and floured 9-inch round cake pans.
  9. Bake at 350°F for 20 to 25 minutes.
  10. Frost with Pecan Frosting once cooled.
