Ingredients

  • 2 c. self-rising flour
  • 1 c. granulated sugar
  • 1 pkg. instant vanilla pudding
  • 1 pkg. instant butterscotch pudding
  • 1 c. water
  • 3/4 c. cooking oil
  • 4 eggs
  • 1 tsp. vanilla
  • 1 1/2 c. brown sugar
  • 1 c. nuts
  • 1 Tbsp. cinnamon

Instructions

  1. Set aside brown sugar, nuts, and cinnamon.
  2. Grease the bottom of a 13 x 9-inch baking pan.
  3. In a large bowl, mix all ingredients except the brown sugar, nuts, and cinnamon. Beat well for 2 minutes.
  4. Pour one-third of the batter into the prepared pan.
  5. Sprinkle with half of the brown sugar, nuts, and cinnamon mixture.
  6. Pour the remaining batter over the first layer.
  7. Sprinkle with the remaining brown sugar, nuts, and cinnamon mixture.
  8. Bake at 350°F (175°C) for 30 to 40 minutes.

Tips & Substitutions

For a richer flavor, consider using brown sugar instead of granulated sugar. If you don't have self-rising flour, you can substitute all-purpose flour and add 1 1/2 tsp baking powder and 1/2 tsp salt. To enhance the toffee flavor, drizzle a bit of toffee sauce over the cake before serving.

Serving Suggestions

Serve the cake warm for a delightful treat, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream. This cake pairs beautifully with a cup of coffee or tea for a satisfying afternoon snack. For something more festive, consider serving it alongside Impressive Jello Salad.

Frequently Asked Questions

Can I make this recipe ahead of time?

Yes, you can prepare the cake a day in advance. Just store it in an airtight container once cooled. If you want to serve it warm, simply reheat it in the oven or microwave before serving.

What can I use instead of nuts?

If you have nut allergies or prefer not to use them, you can omit the nuts entirely or substitute with seeds like sunflower or pumpkin seeds for a similar crunch. You can also use chocolate chips for a different flavor profile.

Can I freeze the cake?

Absolutely! To freeze, wrap the cooled cake tightly in plastic wrap and then in aluminum foil. It can be frozen for up to 3 months. Thaw in the refrigerator overnight before serving, and reheat if desired.
