Tofu Meatless Meatballs

Ingredients

  • 1 pound tofu (firm)
  • 3 eggs, beaten
  • 1/2 c. bread crumbs, seasoned
  • 1/4 c. onion, minced
  • 3 Tbsp. Parmesan cheese, grated
  • 1/2 tsp. garlic powder
  • 1/2 tsp. oregano
  • 1/4 tsp. black pepper
  • 1 c. Cheddar cheese, grated
  • 2 Tbsp. oil

Instructions

  1. Preheat oven to 350°.
  2. Drain and wash tofu thoroughly.
  3. Using fork, mix all ingredients together, except oil and tomato sauce. Shape into 1-inch balls.
  4. Place on greased cookie sheet and bake 20 minutes, turning once.
  5. Put meatless meatballs in a 2-quart baking dish.
  6. Cover with tomato sauce and keep warm until ready to serve.
