Ingredients

  • 1/2 lb. lasagna noodles
  • 2 (10 oz.) pkg. frozen chopped spinach
  • 1 lb. soft tofu
  • 1 lb. firm tofu
  • 1 Tbsp. sugar
  • 1/2 tsp. garlic powder
  • 2 Tbsp. lemon juice
  • 3 tsp. chopped basil or Italian seasoning
  • 2 tsp. salt
  • 4 c. spaghetti sauce

Instructions

  1. Preheat oven to 350°F.
  2. Use a 9 x 13-inch pan for assembling the lasagna.
  3. Defrost the frozen chopped spinach and drain thoroughly.
  4. In a blender or food processor, combine soft tofu, sugar, garlic powder, lemon juice, and 1 teaspoon salt. Blend until smooth.
  5. Taste the tofu mixture and add more salt if necessary.
  6. Spread a layer of spaghetti sauce at the bottom of the pan.
  7. Layer lasagna noodles, half of the tofu mixture, and half of the spinach over the sauce.
  8. Repeat the layers: sauce, noodles, remaining tofu mixture, remaining spinach.
  9. Finish with a layer of noodles topped with sauce.
  10. Cover the pan with foil and bake for 25 to 30 minutes until heated through.
