Ingredients

  • 2 Tbsp. olive oil
  • 1 medium onion, minced
  • 1 c. whole tomatoes, mashed without liquid
  • 1 c. water
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. garlic powder
  • 1 tsp. fresh basil, chopped fine or 1/2 tsp. dried
  • 1 c. rice
  • 4 Tbsp. Parmesan cheese

Instructions

  1. Heat olive oil in a pan and sauté the minced onion until translucent.
  2. Add the mashed whole tomatoes and water to the pan.
  3. Bring the mixture to a boil and add salt, pepper, garlic powder, and chopped basil.
  4. Bring the mixture back to a boil, then add the rice and stir.
  5. Reduce the heat to low, cover the pan, and cook until the liquid is absorbed, about 15 to 20 minutes.
  6. Stir in Parmesan cheese before serving.
