Ingredients

  • 2 cups macaroni, uncooked
  • 1/2 cup chopped onion
  • 1 pound can tomatoes
  • 1/2 teaspoon salt
  • 1 cup sour cream
  • Parmesan cheese, grated
  • 5 tablespoons butter
  • 1/2 teaspoon dried oregano
  • Black pepper
  • 1 cup sharp Cheddar, grated

Instructions

  1. Cook macaroni in boiling, salted water until barely done. Drain and set aside.
  2. In a large skillet, sauté chopped onion in 3 tablespoons of butter until translucent.
  3. Add the canned tomatoes with liquid, dried oregano, salt, and black pepper to taste. Cook over medium heat for about 10 minutes, breaking up the tomatoes.
  4. Add the cooked macaroni, sour cream, and grated Cheddar cheese. Mix well.
  5. Pour the mixture into a baking dish. Top with 2 tablespoons of butter and grated Parmesan cheese.
  6. Bake in a preheated 350°F (175°C) oven for 25 minutes until golden and bubbly.
