Tomato-Avocado Toasts

Ingredients

  • 1 small baguette
  • 2 Tablespoons olive oil
  • 1 ripe avocado
  • fresh lemon juice
  • 1 pint grape tomatoes, quartered
  • coarse salt
  • ground pepper

Instructions

  1. Preheat oven to 350
  2. Slice baguaette diagonally into sixteen 1/2-inch slices; brush both sides with a total of 2 tablespoons olive oil.
  3. Bake on a baking sheet until golden, about 8 minutes.
  4. Halve avocado lengthwise and rmove pit. Scoop flesh into a small bowl.
  5. Mash avocado with lemon juice, season with salt and pepper.
  6. Spread on toasted bread.
  7. Top with grape tomatoes.
