Ingredients

  • 6 hard-cooked eggs
  • 3 ripe tomatoes
  • 3 Tbsp. butter or margarine
  • 3 Tbsp. flour
  • 1 1/2 tsp. salt
  • 1 1/2 c. milk
  • 1/2 c. grated cheese
  • 1/4 c. buttered bread crumbs

Instructions

  1. Cut the hard-cooked eggs into desired shapes and arrange them around the edge of a greased baking dish.
  2. Peel and slice the tomatoes and place them in the center of the baking dish.
  3. Make a sauce by melting butter, then stirring in flour, salt, and milk; cook until smooth and blended.
  4. Add grated cheese to the sauce and stir until melted.
  5. Pour the cheese sauce over the tomatoes and eggs in the baking dish.
  6. Sprinkle buttered bread crumbs on top.
  7. Bake in a 375°F oven for 20 minutes until golden and bubbly.
