A refreshing tomato juice salad with tangy vinegar, crunchy cabbage, and chopped olives, perfect as a light appetizer or side dish for casual or summer meals.

Ingredients

  • 1 pkg. lemon Jell-O (3 oz.)
  • 1 c. water
  • 1 c. tomato juice
  • 1 c. shredded cabbage
  • 2 Tbsp. chopped green peppers
  • 2 Tbsp. chopped onion
  • dash of garlic powder
  • 1/2 tsp. salt
  • dash of celery salt
  • 1/2 c. chopped olives or sliced
  • 3 Tbsp. vinegar or lemon juice

Instructions

  1. Bring 1 cup of water to a boil and dissolve the lemon Jell-O in it.
  2. Add the tomato juice to the dissolved Jell-O and let it cool until it begins to thicken.
  3. Mix in the shredded cabbage, chopped green peppers, chopped onion, garlic powder, salt, celery salt, chopped olives, and vinegar or lemon juice.
  4. Pour the mixture into molds and refrigerate until set.
  5. Serve the salad on lettuce leaves with Ranch dressing.
