Ingredients

  • 15 oz. can tomato sauce
  • 0.5 lb. lean ground beef
  • 2 Tbsp. chopped parsley
  • 2 tsp. instant minced onion
  • 0.25 tsp. oregano
  • 0.25 tsp. marjoram
  • 1 cup cottage cheese
  • 2 cloves garlic
  • 1 (3 3/4 oz.) pkg. manicotti shells
  • 2 c. shredded Jack cheese
  • 0.5 c. shredded Parmesan cheese

Instructions

  1. Pour 1/2 cup of tomato sauce into a 2-quart shallow baking dish; set aside.
  2. Cook the manicotti shells according to package instructions until al dente; drain and set aside.
  3. In a skillet, cook the ground beef until browned; drain excess fat.
  4. Add minced garlic, chopped parsley, instant minced onion, oregano, and marjoram to the beef; cook for 1-2 minutes until fragrant.
  5. Stir in the cottage cheese and half of the shredded Jack cheese until well combined.
  6. Stuff the cooked manicotti shells with the cheese mixture and place them in the prepared baking dish.
  7. Pour the remaining tomato sauce over the filled shells.
  8. Sprinkle the remaining shredded Jack cheese and Parmesan cheese evenly over the top.
  9. Bake in a preheated oven at 375°F (190°C) for 30-40 minutes, until bubbly and golden.
