Ingredients

  • 6 medium firm tomatoes, thinly sliced
  • 1 large baked pizza crust
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 can (2 1/4 oz.) sliced ripe olives, drained
  • 1/2 c. diced green pepper
  • 1/2 c. diced onion
  • 1 Tbsp. chopped basil
  • 1 c. (4 oz.) shredded Mozzarella cheese

Instructions

  1. Place tomato slices in a circle on the crust, overlapping slightly until the crust is completely covered.
  2. Drizzle with olive oil and season with salt and pepper.
  3. Cover with olives if desired, then add green pepper and onion.
  4. Sprinkle chopped basil over all.
  5. Cover with shredded Mozzarella and Cheddar cheeses.
  6. Bake at 400°F (200°C) for 15 minutes, or until cheese is melted.
  7. Serve immediately.
