Ingredients

  • 1 1/4 lb. bulk Italian sausage
  • 1 1/2 cups sliced celery
  • 8 medium fresh tomatoes peeled and cut
  • 1 1/2 cups tomato juice
  • 4 small zucchini sliced in 1/4-inch pieces
  • 2 1/2 teaspoons Italian seasoning
  • 1 1/2 to 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 3 cups canned or frozen corn
  • 2 medium green peppers sliced
  • 1/4 cup cornstarch
  • 1/4 cup water
  • Shredded mozzarella cheese

Instructions

  1. In a 4-quart Dutch oven, brown and crumble the Italian sausage.
  2. Add sliced celery and cook for 15 minutes; then drain.
  3. Add peeled and chopped fresh tomatoes, tomato juice, sliced zucchini, Italian seasoning, salt, sugar, garlic salt, and pepper.
  4. Bring the mixture to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Add canned or frozen corn and sliced green peppers.
  7. Cover again and simmer for an additional 15 minutes.
  8. In a small bowl, combine cornstarch and water to make a slurry.
  9. Stir the slurry into the stew and bring to a boil.
  10. Cook and stir until the mixture thickens.
  11. Sprinkle shredded mozzarella cheese on top before serving.
