  • 2/3 cup salad oil
  • 1/4 cup tarragon vinegar

  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 clove garlic, minced

Instructions

  1. Place tomatoes in boiling water for about 30 to 35 seconds to loosen skins.
  2. Remove skins and slice tomatoes about 1/2-inch thick.
  3. Place sliced tomatoes in a deep bowl.
  4. In a jar, combine salad oil, tarragon vinegar, snipped parsley, sliced green onions, dried thyme or fresh thyme, salt, freshly ground pepper, and minced garlic.
  5. Shake the jar well to mix the dressing.
  6. Pour the dressing over the sliced tomatoes.
  7. Cover and chill for about 5 to 6 hours, spooning dressing over the tomatoes occasionally.
  8. Before serving, drain off excess dressing.
  9. Garnish with more snipped parsley and serve with sliced cucumbers if desired.
