Ingredients

  • 1 yellow onion, cut in chunks
  • 2 cloves garlic, crushed
  • 2 (15 oz.) cans stewed tomatoes
  • 1 (15 oz.) can tomato sauce
  • 1 cup chopped zucchini
  • 1 cup corn kernels
  • 1 (15 oz.) can garbanzo beans, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon soy sauce
  • Black pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic in a small amount of water until soft.
  2. Add the stewed tomatoes, tomato sauce, chopped zucchini, corn, garbanzo beans, dried basil, dried oregano, and soy sauce.
  3. Cook for about 15 minutes.
  4. Add the spaghetti and cook until tender, about 10 minutes.
  5. Add the greens and stir until wilted.
  6. Serve immediately.
