Ingredients
- 1 yellow onion, cut in chunks ⓘ
- 2 cloves garlic, crushed ⓘ
- 2 (15 oz.) cans stewed tomatoes ⓘ
- 1 (15 oz.) can tomato sauce ⓘ
- 1 cup chopped zucchini ⓘ
- 1 cup corn kernels ⓘ
- 1 (15 oz.) can garbanzo beans, drained and rinsed ⓘ
- 1 teaspoon dried basil ⓘ
- 1 teaspoon dried oregano ⓘ
- 1 tablespoon soy sauce ⓘ
- Black pepper to taste ⓘ
Instructions
- In a large pot, sauté the onion and garlic in a small amount of water until soft.
- Add the stewed tomatoes, tomato sauce, chopped zucchini, corn, garbanzo beans, dried basil, dried oregano, and soy sauce.
- Cook for about 15 minutes.
- Add the spaghetti and cook until tender, about 10 minutes.
- Add the greens and stir until wilted.
- Serve immediately.
