Ingredients

  • 1 1/2 cups coarsely chopped cooked turkey
  • 1 (16 oz.) jar chunky salsa
  • 1 (15 oz.) can pinto beans drained
  • 1/2 cup Miracle Whip salad dressing
  • 1/3 cup chopped green onions
  • 1 cup whole tomatoes well drained and cut up
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper
  • 6 flour tortillas 7-inch
  • 1 cup natural shredded sharp Cheddar cheese divided

Instructions

  1. Preheat oven to 350°F.
  2. Mix turkey, 1/2 cup salsa, beans, dressing, onions, tomatoes, cumin, and red pepper in a saucepan.
  3. Cook, stirring occasionally, over medium heat for 10 minutes or until thickened.
  4. Place 2 tortillas on a cookie sheet.
  5. Spread 3/4 cup of the turkey mixture to the edge of each tortilla.
  6. Sprinkle each with 1/4 cup of cheese.
  7. Repeat layers, ending with a tortilla.
  8. Top each stack with remaining salsa.
  9. Bake for 15 minutes or until thoroughly heated.
  10. Cut each stack into quarters.
  11. Top with lettuce, sour cream, tomato, cilantro, and additional cheese if desired.
