Tortilla Stack
A flavorful layered tortilla stack featuring seasoned turkey, beans, cheese, and salsa, perfect for a hearty, crowd-pleasing meal with vibrant Tex-Mex flavors.
Ingredients
- 1 1/2 cups coarsely chopped cooked turkey ⓘ
- 1 (16 oz.) jar chunky salsa ⓘ
- 1 (15 oz.) can pinto beans drained ⓘ
- 1/2 cup Miracle Whip salad dressing ⓘ
- 1/3 cup chopped green onions ⓘ
- 1 cup whole tomatoes well drained and cut up ⓘ
- 1 teaspoon ground cumin ⓘ
- 1/4 teaspoon ground red pepper ⓘ
- 6 flour tortillas 7-inch ⓘ
- 1 cup natural shredded sharp Cheddar cheese divided
Instructions
- Preheat oven to 350°F.
- Mix turkey, 1/2 cup salsa, beans, dressing, onions, tomatoes, cumin, and red pepper in a saucepan.
- Cook, stirring occasionally, over medium heat for 10 minutes or until thickened.
- Place 2 tortillas on a cookie sheet.
- Spread 3/4 cup of the turkey mixture to the edge of each tortilla.
- Sprinkle each with 1/4 cup of cheese.
- Repeat layers, ending with a tortilla.
- Top each stack with remaining salsa.
- Bake for 15 minutes or until thoroughly heated.
- Cut each stack into quarters.
- Top with lettuce, sour cream, tomato, cilantro, and additional cheese if desired.
