Flavorful chicken roll-ups packed with tomatoes, chilies, and onions, lightly browned and served with a tangy vinegar sauce—perfect for a quick, satisfying meal or appetizer.

Ingredients

  • 4 flour or corn tortillas
  • 1 onion
  • 1 (14 oz.) can Mexican style tomatoes
  • 1 (4 oz.) can whole green chilies
  • 1 1/2 cups shredded cooked chicken
  • 2 Tbsp. oil
  • 2 tsp. red wine vinegar

Instructions

  1. In a large skillet, cook onion in oil until tender and crisp.
  2. Drain tomatoes and reserve liquid.
  3. Add liquid and oregano to skillet and cook over high heat for 3 minutes, stirring frequently.
  4. Stir in meat and chilies; remove from heat.
  5. Spoon chicken mixture on each tortilla and roll up.
  6. Add remaining oil to skillet and lightly brown roll-ups.
  7. Chop tomatoes and stir in vinegar.
  8. Pour this over roll-ups.
  9. Cover and cook over low heat for 3 minutes.
