Ingredients

  • 3 cups sugar
  • 1 cup oil
  • 3 eggs
  • 3 cups very ripe bananas
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 cups chopped pecans

Instructions

  1. Mix well the sugar, oil, eggs, and bananas.
  2. Sift the flour, salt, baking powder, baking soda, and cinnamon, then add to the banana mixture.
  3. Add chopped pecans and vanilla extract.
  4. Grease and flour 4 or 5 small loaf pans or 3 round coffee cans, then pour in the batter.
  5. Bake at 350°F (175°C) for 65 to 70 minutes until a toothpick inserted in the center comes out clean.
