Mom'S Cornbread Dressing

Ingredients

  • 1 large fryer chicken
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 large pan cornbread
  • 1 quart broth
  • 3 eggs
  • salt and pepper

Instructions

  1. Place chicken in a large pan and cover with water.
  2. Bring to a boil and cook until tender.
  3. Add water to have at least 1 quart of broth.
  4. Cool the chicken and remove the bones.
  5. Cool and crumble the cornbread in a large bowl.
  6. Cook diced onion and celery in 1 tablespoon butter until the onion is clear.
  7. Add the cooked onion, celery, and broth to the crumbled cornbread and mix well until moist.
  8. Add salt and pepper to taste.
  9. Beat in 3 eggs and mix well.
