Mom'S Cornbread Dressing

Instructions
- Place chicken in a large pan and cover with water.
- Bring to a boil and cook until tender.
- Add water to have at least 1 quart of broth.
- Cool the chicken and remove the bones.
- Cool and crumble the cornbread in a large bowl.
- Cook diced onion and celery in 1 tablespoon butter until the onion is clear.
- Add the cooked onion, celery, and broth to the crumbled cornbread and mix well until moist.
- Add salt and pepper to taste.
- Beat in 3 eggs and mix well.
