Ingredients

  • 5 lb. beef tripe
  • 1 (28 oz.) can crushed tomatoes
  • 4 (8 oz.) cans tomato sauce
  • 1 can water
  • 3 medium potatoes
  • 1 1/2 tsp. parsley
  • 1/2 tsp. oregano
  • 1/2 tsp. dried basil
  • 6 fresh basil leaves
  • 2 Tbsp. olive oil
  • 3 cloves garlic

Instructions

  1. Boil tripe for 2 hours with 1 tablespoon of baking soda to soften.
  2. Rinse tripe with cold water.
  3. Cut tripe into 3 x 1/2-inch strips and set aside.
  4. In a large pot, heat olive oil over medium heat.
  5. Add minced garlic and diced onion; sauté until fragrant.
  6. Add crushed tomatoes, tomato sauce, and water to the pot.
  7. Stir in diced potatoes, parsley, oregano, and basil.
  8. Bring to a boil, then reduce heat and simmer for about 1 hour until flavors meld and potatoes are tender.
