Ingredients

  • 1 1/2 cups water
  • 1 (8 oz.) can tomato sauce
  • 1 package spaghetti sauce mix
  • 2 cups shredded Mozzarella cheese, divided
  • 1 cup Ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 manicotti shells, cooked and drained

Instructions

  1. Combine water, tomato sauce, and spaghetti sauce mix in a small saucepan.
  2. Simmer, uncovered, for 10 minutes.
  3. Mix 1 cup of Mozzarella, Ricotta, Parmesan, beaten eggs, salt, and pepper in a bowl.
  4. Stuff the cheese mixture into the cooked and drained manicotti shells, using about 1/4 cup for each shell.
