Tomato-Basil Bruschetta

Ingredients
- 1/4 c. extra virgin olive oil ⓘ
- 2 large garlic cloves, minced ⓘ
- 1 lb. ripe tomatoes, peeled, seeded and chopped ⓘ
- 1/3 c. sweet white or red onion, chopped ⓘ
- 1/3 c. coarsely chopped fresh basil ⓘ
- 8 slices crusty Italian bread, cut 1/2-inch thick ⓘ
- 2 Tbsp. balsamic vinegar ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 tsp. coarsely ground black pepper ⓘ
- 1 c. shredded Mozzarella cheese ⓘ
Instructions
- In a small bowl, combine olive oil and minced garlic; let stand for 15 minutes.
- In a medium bowl, combine chopped tomatoes, chopped onion, basil, balsamic vinegar, salt, and black pepper.
- Add 2 tablespoons of garlic oil to the tomato mixture and stir gently to combine.
- Let the mixture stand for 15 to 30 minutes to allow flavors to blend.
- Toast the bread slices until crusty.
- Top each slice with the tomato mixture, sprinkle with shredded mozzarella cheese, and garnish with basil leaves.
- Serve immediately.
