Ingredients

  • 1/4 c. extra virgin olive oil
  • 2 large garlic cloves, minced
  • 1 lb. ripe tomatoes, peeled, seeded and chopped
  • 1/3 c. sweet white or red onion, chopped
  • 1/3 c. coarsely chopped fresh basil
  • 8 slices crusty Italian bread, cut 1/2-inch thick
  • 2 Tbsp. balsamic vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. coarsely ground black pepper
  • 1 c. shredded Mozzarella cheese

Instructions

  1. In a small bowl, combine olive oil and minced garlic; let stand for 15 minutes.
  2. In a medium bowl, combine chopped tomatoes, chopped onion, basil, balsamic vinegar, salt, and black pepper.
  3. Add 2 tablespoons of garlic oil to the tomato mixture and stir gently to combine.
  4. Let the mixture stand for 15 to 30 minutes to allow flavors to blend.
  5. Toast the bread slices until crusty.
  6. Top each slice with the tomato mixture, sprinkle with shredded mozzarella cheese, and garnish with basil leaves.
  7. Serve immediately.
