  3. In a 4-quart Dutch oven, cook onion, celery, and carrot in butter until tender.
  4. Stir in cornstarch until well combined.
  5. Add the milk and bouillon granules to the onion mixture and stir.
  6. Stir in the cooked potatoes.
  7. Cook and stir until the mixture is slightly thickened, then cook and stir for 2 minutes more.
  8. Add shredded American cheese and stir until melted.
  9. Add chopped ham and heat through.
  10. Serve topped with additional cheese.
