Ingredients

  • 8 oz. bittersweet chocolate
  • 4 oz. unsalted butter
  • 2 egg yolks
  • 2 Tbsp. dark rum
  • unsweetened cocoa

Instructions

  1. Melt the bittersweet chocolate in a bowl over hot water.
  2. Remove the bowl from hot water and whisk in the unsalted butter.
  3. Whisk in the egg yolks.
  4. Add the dark rum, cognac, or orange liqueur.
  5. Place the bowl over cold water and beat vigorously until the mixture is thick and smooth.
  6. Chill the mixture until workable.
  7. Form into balls using 2 teaspoons of the mixture and roll in unsweetened cocoa.
  8. Place on a chilled plate until firm.
  9. Roll the truffles in cocoa again and keep chilled in a covered container until served.
