Ingredients

  • 1 Tbsp. vegetable oil
  • 1 onion, julienned
  • 1 green pepper, julienned
  • 1/2 lb. mushrooms, halved
  • 1/2 tsp. garlic, chopped
  • 1/4 cup tomato paste
  • 2 1/2 lb. chicken breasts, dusted with seasoning salt and herb mixture
  • 2 tsp. basil leaves
  • 1/2 cup chicken broth
  • 2 tomatoes

Instructions

  1. Saute onions and green peppers in vegetable oil until tender.
  2. Add halved mushrooms, chopped garlic, and tomato paste; cook for a few minutes.
  3. Coat chicken breasts with seasoning salt and herb mixture.
  4. Brown chicken breasts lightly in oil in a separate pan or with the vegetables.
  5. Add the vegetable mixture and chicken broth to the pan with the chicken.
  6. Cover and cook for 30 minutes.
  7. Add chopped tomatoes to the pan.
  8. Cover and cook for an additional 15 minutes.
  9. Serve the Tucson Chicken over noodles or rice.
