Ingredients

  • 2 packages (10 oz. each) frozen chopped spinach
  • 1/4 cup butter or margarine
  • 1/4 cup flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dry mustard
  • 1/8 tsp. onion salt
  • 2 cups milk
  • 1/2 cup mayonnaise
  • 1 Tbsp. lemon juice
  • 1 can (6.5 oz.) tuna, drained
  • 1 cup croutons

Instructions

  1. Heat oven to 350°F.
  2. Cook frozen spinach according to package directions.
  3. Melt butter in a saucepan over low heat.
  4. Stir in flour, salt, pepper, dry mustard, and onion salt until smooth.
  5. Cook over low heat, stirring until mixture is bubbly and thickened.
  6. Remove from heat and stir in milk, heating to a gentle boil while stirring.
  7. Boil and stir for 1 minute.
  8. Blend in mayonnaise and lemon juice.
  9. Fold in drained tuna and croutons.
  10. Transfer mixture to a baking dish and bake until hot and bubbly, about 15 minutes.
