  • 2 c. broccoli flowerets
  • 1/2 c. pitted black olives
  • 1/2 c. olive oil
  • 1/2 c. white wine vinegar
  • 2 Tbsp. snipped parsley
  • 2 tsp. dried oregano, crushed
  • 1 tsp. dried thyme, crushed
  • 1/2 tsp. crushed red pepper
  • 4 oz. Provolone cheese, cut into sticks
  • leaf lettuce
  • 2 oz. thinly sliced salami

Instructions

  1. Cook potatoes, covered, in a large saucepan in boiling lightly salted water for about 20 minutes or until tender.
  2. Add carrots to the potatoes during the last 3 minutes of cooking.
  3. Drain; cool slightly. Quarter the potatoes.
  4. In a plastic bag set in a large bowl, combine the potatoes, carrots, broccoli flowerets, and black olives; set aside.

Tips & Substitutions

For a creamier texture, consider adding a dollop of sour cream or Greek yogurt on top before serving. If you can't find tiny new potatoes, you can substitute with regular potatoes cut into smaller pieces. Feel free to customize the vegetable mix; roasted bell peppers or artichokes would add great flavor. If you want a lighter option, skip the cheese or use a dairy-free alternative.

Serving Suggestions

Serve the New Potato Antipasto on a bed of leaf lettuce for a fresh presentation. It pairs beautifully with Mediterranean recipes like Zucchini Pitas(Quick And Easy Open Pockets) or a light salad. Consider serving it alongside crusty bread or crackers for a complete appetizer spread. This dish also makes a great picnic item or potluck contribution.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the antipasto in a microwave-safe dish and cover it to retain moisture. Heat in 30-second intervals, stirring occasionally until warmed through. For best flavor, enjoy it cold or at room temperature.

Frequently Asked Questions

Can I make this antipasto ahead of time?

Yes, you can prepare the antipasto a day in advance. Just keep the vegetables and dressing separate until you're ready to serve to maintain freshness. Combine everything shortly before serving to ensure the flavors meld beautifully without the vegetables becoming soggy.

What can I substitute for Provolone cheese?

If Provolone cheese isn't available, you can use mozzarella or a mild cheddar as substitutes. For a stronger flavor, consider using aged Gouda or Fontina cheese. Ensure the cheese is cut into sticks for easy serving, maintaining the antipasto's intended presentation.

Can I add more vegetables to this recipe?

Absolutely! Feel free to add other vegetables such as cherry tomatoes, artichokes, or roasted red peppers. Just make sure to adjust the cooking times accordingly to ensure everything is tender and flavorful. This flexibility allows you to tailor the antipasto to your personal taste.
