Ingredients

  • 2 cups leftover turkey, cubed
  • 3 cups water
  • 2 or 3 slices bacon, cut up
  • 1 medium onion, chopped
  • 1 (16 oz) can diced tomatoes
  • 2 medium potatoes, diced
  • 1/2 cup chopped carrots
  • 1/2 teaspoon dried thyme, crushed
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Partially cook bacon in a large saucepan; stir in chopped onion.
  2. Cook until the onion is tender.
  3. Stir in water, undrained diced tomatoes, turkey, potatoes, carrots, thyme, salt, and pepper.
  4. Bring to a boil; reduce heat and cover.
  5. Simmer for 30 to 35 minutes or until vegetables are tender.
  6. Mash slightly to thicken the chowder.
