Ingredients

  • 2 c. cooked, cut-up chicken or turkey
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/2 c. chopped carrots
  • 3 qt. turkey or chicken broth
  • 1 c. orzo (uncooked)
  • salt
  • pepper

Instructions

  1. Saute chopped onion in a little margarine until translucent.
  2. Combine cooked, cut-up chicken or turkey, chopped onion, chopped celery, chopped carrots, and turkey or chicken broth in a pot. Cook for 5 to 10 minutes.
  3. Add uncooked orzo, salt, pepper, and parsley to the pot. Cook until orzo is done.
