Ingredients

  • 1 to 2 lb. turkey cutlets or breast slices
  • 1/2 cup flour
  • 1/2 cup Parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup lemon juice (optional)
  • 1 egg yolk, beaten
  • 1 cube or packet beef bouillon, dissolved in 1/2 cup hot water
  • 1/4 cup dry white wine

Instructions

  1. Mix flour, Parmesan cheese, salt, and pepper in a shallow dish.
  2. Moisten turkey slices and coat them with the flour mixture.
  3. Melt 2 tablespoons of butter or oil in a skillet over medium heat.
  4. Saute turkey slices until they turn a light brown, about 3-4 minutes per side.
  5. Set cooked meat aside in a warm place; if desired, sprinkle lemon juice over the meat.
  6. Mix the dissolved bouillon, white wine, and beaten egg yolk together.
  7. Add this mixture to the skillet drippings and stir vigorously until the sauce thickens slightly.
